Taiwan's foodservice industry can be seen moving into M-shaped development as both premium and economical outlets proliferate while the number of middle-tier operators decreases.

This is a reflection of the macro economy and social development as Taiwan society becomes more polarised as the disparity between income classes continues to widen; forcing middle tier operators to adjust prices or added value to cater to different segment of consumers.

The trend was evident at the Taiwan International Coffee Show held in November 2017, with the number of smaller and independent exhibitors greatly increased compared to years past.
